Results clarify how an Open-air Market can be used by farmers to develop the local food system. Many and various kinds of Open-air Markets have come to be strong distribution channels worldwide. This study examines “Tsuku-Ichi” in Ibaraki prefecture as an analytical example of a market that might strongly impact on the local food system. This case study of “Tsuku-Ichi”, based on our interviews of consumers in this market, reveals that it actually has high-impact on the local food system only in the case of interaction between processed food producers and consumers.
